If you’ve scrolled through London social media posts, you’ve encountered one (or more) viral videos of people visiting Borough Market. Dating back around 1,000 years, The Market is London’s oldest food market. In fact, Borough Market’s earliest record dates back to 1276, though it likely existed even before then. It started as a wholesale market before it became home to a whole slew of artisan retailers in the 90s. Surrounded by buzzy restaurants, it features a variety of local food stalls, grocers and vendors inside.
However, with so many options of what to eat and explore, a visit to the market can be overwhelming. Luckily, to celebrate the hotel’s 10th anniversary, the team at Shangri-La, The Shard London launched a collection of unique experiences, including a culinary walking tour around Borough Market with one of the chefs from the property. Ascanio Placido, head chef at TING Restaurant in Shangri-La The Shard, leads one of the tours.

Beginning his culinary journey at 10 years old, he was originally inspired when he met a chef from his hometown in Southern Italy who had just returned from a six-month journey working on a cruise ship. “I was captivated by his stories—of the places he’d seen, the people he’d met and the flavors he encountered,” explains Placido in an interview with Forbes. “From that moment, I knew I wanted to become a chef, not only to create unforgettable dishes but also to explore the world and connect with others through food.”
As a fan of Borough Market, he mentions that sharing his favorite spots with guests in the Behind The Scenes experience is a highlight for him. “There’s a special sense of community here—each vendor has a story, and the market is filled with hidden gems you won’t find in a supermarket,” says Placido. “Supporting these small businesses feels meaningful, and it’s a vibrant experience I think everyone should have when they’re in London—including Londoners!”

The Behind The Scenes campaign was launched prior to the summer. Located in the heart of the Market, Placido dubs Camille as ‘a charming bistro.’ He claims the spot does simple, high-quality food with refined techniques. “They’re committed to using exceptional ingredients, and it really shines through in their dishes.”

Placido dubs The Ginger Pig as his ‘go-to butcher.’ “They’re probably the most renowned in Borough Market,” he says. “Their commitment to sustainability is inspiring, and they offer some of the finest cuts, including authentic French chipolata sausages that you’d be hard-pressed to find anywhere else in London.”

During the summertime, you’ll find Placido unwinding after a shift at El Pastor. “Nestled under the railway arches at London Bridge, they serve authentic Mexican fare,” he explains. “My must-have is one of each soft-shell taco—chicken, beef, and pork—paired with a frozen margarita. It’s the perfect way to end the day.”
